Augurio was born from the personal and professional project of two chefs trained at the prestigious Escuela Superior de Hostelería de Sevilla (Alabardero). United by a shared vision, they set out to create a distinctive gastronomic proposal with its own identity, technical mastery, and emotion — always rooted in deep respect for tradition.
After completing their training, both chefs built their careers in high-end restaurants across Spain and abroad, many of them awarded Michelin stars. These experiences gave them a rock-solid technical foundation and an open outlook on other culinary cultures.
Following several years working internationally, particularly in London, they returned to Andalusia with a clear goal: to create their own project. After an initial stage in Punta Umbría, where they consolidated their concept and built a loyal clientele, they finally established Augurio in Seville, their hometown.
Today, Augurio is a restaurant offering signature cuisine that is fresh and contemporary. The space has been designed to reflect its identity: sobriety, aesthetic coherence, and absolute focus on the product.
Our cuisine is based on the finest local Andalusian ingredients — proximity and km 0 produce — combined with Japanese, British, Peruvian, and Mexican influences drawn from our professional journeys. Each dish is built through multiple preparations that seek complexity, balance, and a distinctive signature.
